甘筍橙muffins / carrot orange muffins

這天又想吃muffins, 就試做這一個啦. 它用了麥粉和甘筍, 很重手又飽肚, 很好的早餐~

300g self-raising flour
80g wholemeal flour
110g sugar
1.5 cups grated carrot
2 eggs
125g melted butter
125ml milk
1 tsp grated orange rind
125ml orange juice

sift flours and sugar into large bowl, stir in carrot, eggs, butter milk, rind and juice. spoon mixture into prepared pan, bake in 220-210C oven about 25mins.

note from rice:
- vegetable oil can be substituted, will more healthy
- if not self-raising flour, use 300g plain four + 4 tsp baking powder
- this time i used 1 large orange rind (about 3tsp), taste more "orange"
